Mushroom and Cabbage rice

It's been some time. I've been practising and learning to familiarize with previous dishes.

Finally, something new on the menu. =) Got this recipe from Cold Storage a really long time ago and brought it over from my mum's place. I am so delighted to be able to try my hands on this!

Sweet Honey Chicken Fillet

I found the above recipe online and decided to try it since I have most of the ingredients available. =)

Note:
I used chili sauce packs which we took back from our various fast-food gobbling sessions. 5 packets generally = 2 tablespoons worth.
And I skipped the honey, cause I felt it was quite unnecessary with the sugar in there.


The final product turned out pretty acceptable. ^_^ At least the 2 guinea pigs which were my unfortunate experimental victims didn't complain too much about it. ^_^

Egg with Silver Fish


Ingredients:
1 handful of small silver fish (washed)
2 eggs
Salt to taste (alternative: light soy sauce)

Method:


  1. Beat egg with silverfish.
  2. Add a dash of salt.
  3. Fry mixture till egg is yellow-golden.
  4. Serve hot.

Herbal Chicken Soup

The wonders of pre-packing in these days of "instant".


Ingredients:
1 packet of pre-packed herbs for chicken soup (see picture.)
Chicken (I used drumlets for convenience and easy handling.)
Water
Salt to taste

Method:
Cook as per instructions on package. (see below)

  • Bring water to boil
  • Add herbs and chicken
  • Simmer for 2 hours
  • Add salt to taste
  • Serve hot

Stir Fried Cabbage

Did this some weeks ago. =)


Ingredients:
1 small handful of dried shrimps, soaked
100g white cabbage, cut bite size
1 fish cake, sliced
4 cloves of garlic
1/2 tbsp oyster sauce
olive oil

Methods:
1. Heat the wok, and fry the garlic in oil until fragrant.
2. Add in dried shrimps, and fry until fragrant.
3. Add fish cake and fry for 1min.
4. Add in the cabbage and some water, and cook until soft.
5. Add in the oyster sauce.
6. Serve hot.

Barley Drink

A simple barley drink to quench your thirst and battle with the horrendously hot weather.
;-)

Ingredients:
1 Cup of China Pearl Barley Seeds
10 Cups of Water
Rock Sugar to taste

Method:
Add barley seed and water into pot and bring to boil.
Turn fire down to small and let it simmer.
Add rock sugar to taste.
Can be served hot or chilled.

Alternatives:
1) Add freshly squeezed lemon juice to chilled barley to get that zesty taste.
2) Add tau-gee (soya skin) and Ginko. (Ginko Barley Dessert with Foo Chuk)

Fried Wanton


Ingredients:
Dried mushrooms (Soaked and chopped into tiny pieces)
Mince pork
Pepper
Light Soy Sauce
Dark Soy Sauce
Pepper
(Wanton skin)


Method:
  1. Mix all ingredients in a bowl.
  2. Add a teaspoon of mixture to 1 piece of wanton skin.
  3. Seal by dabbing mushroom water along 2 sides of wanton skin. Fold half into triangle.
  4. Deep fry till golden brown.
  5. Dish onto kitchen tower (to rid of excess oil)
  6. Serve hot & crispy.

Porridge (with meatball and fishcake)


Ingredients:
Mince Pork (Marinated with light & dark soy sauce, pepper)
Fish cake (sliced)
Rice

Method:
  1. Wash rice, add 4 times the amount of water you would when cooking rice with light soy sauce (to taste).
  2. Place in rice cooker.
  3. 5min later, open rice cooker.
  4. Throw in Fishcake sliced and mince pork (shaped in little meatballs)
  5. Wait till cooked. Serve hot.

Home-made Chrysanthemum Drink

Ingredients:
Chrysanthemum Flower (from any chinese medical hall, pre-packed)
Rock Sugar (to taste)

Method:
  1. Add a handful of chrysanthemum flowers into pot. (A good estimate would be that the flowers fill up the 1/2 to 3/4 base of the pot nicely in a single layer.)
  2. Add water to 4/5 of the pot.
  3. Bring to boil
  4. Add rock sugar to taste. (They melt slowly and are quite powerful, so dun be anxious to add too much.
  5. Pour into serving flask and serve either warm or chilled, depending on preference.

Fried Rice (v01)

Serves: 4pax

Ingredients:
Steamed rice (1.5cups)
2 Eggs (beaten)
3 Sausages (cut into small slices)
4 Crabstick (cut into small slices)
1 Garlic (diced finely or chopped roughly, depending on your preference)
Cooking Oil
Soy sauce for taste

Method:
  1. Heat oil in wok.
  2. Add garlic. Fry until fragrant. (about 30 seconds should do)
  3. Add rice, sausage, crabstick. Fry till well mixed.
  4. Add eggs.
  5. Add soy sauce to taste. Dish & serve hot.

Toasted Chicken Wings

Serves: 2pax

Ingredients:
Chicken Wings, mid joints (6 pcs)
Oyster sauce (1 tbsp)
Sesame oil (0.5 tbsp)
Pepper (dash)
Dark Soy sauce (1 tbsp)

Preparation:
Add sauces to chicken wings and marinate overnight.

Method:
  1. Place marinated chicken wings in toaster and toast for 8min.
  2. Flip chicken over and toast for another 5min.
  3. Dish and serve hot.
